House of Douglas Bakery
House of Douglas Bakery is located in Cosby, Tennessee near Gatlinburg in the Smoky Mountains, just a few miles from the Great Smoky Mountain National Park's east entrance.
"We bake everything from scratch," says David Waddell, who owns the bakery with his wife, Linda. "people tell us that they come here because they miss the taste of freshly-prepared 'real' foods."
David is from Scotland and spent fifteen years as a bush pilot in Kenya. He found his way to San Diego in the eighties, where he met and married, Linda, an American of Irish descent. Her favorite spot in Southern California was Dudley's Bakery, from which came the dream of starting her own bakery. David, himself, loved to bake, and so the couple to move to Oklahoma and opened an Italian restaurant. Their Scottish Struan bread became so popular there, that customers bought more bread than spaghetti. The decision was then made to ditch the pasta and concentrate on the baking.
They began specializing in Scottish Baked Goods to sell at the many gatherings for Scottish Highland Games and Celtic festivals around the country (caber tossing anyone?). They moved to Gatlinburg, TN, for its central location and relatively easy drive to states such as Texas, Florida, Michigan, New York, Virginia, and Indiana, where the games and festivals are held.
Most of their freshly-made baked goods are Scottish, but they also prepare German and Swedish dishes. The House of Douglas Scottish Bakery is world-known for the Scottish Struan and other European Breads, such as Shortbreads, Stollen, Irish Soda Bread, Scones, and their fabulous, homemade "Big" cookies.
The House of Douglas Scottish Bakery is one of only a handful of places in the whole world that make Struan bread - a mixture of wheat, corn, oats, brown rice, and bran, moistened with buttermilk and sweetened with brown sugar and honey. Scots traditionally made it out of whatever grains they had harvested for the feast of Saint Michael the Archangel.
